Eat This, Not That

We decided to get started with potty training last week. And as any parent who has been there before knows, sometimes you promise things you can't deliver on just to get them to do what needs to be done.

Nobody told me that they will remember every.little.promise.

And after 2 days of asking, we made cupcakes yesterday. With sprinkles. Even though the kid is still wearing diapers.Trying to pick my battles here...

So, I was making up the cupcakes and luck would have it that I only had enough paper liners to make 12 regular sized cupcakes... but I had tons of mini liners for mini cakes... so I ended up with 12 regular cupcakes and 24 mini cupcakes. Which actually made me happy because I did the math...



Regular Sized cupcake with "normal" amount of frosting: 225 calories, 6.75g fat... 5 Weight Watchers points.
Mini Cupcake with 1 teaspoon frosting (plenty for a tiny cake!): 79 calories, 1.7g fat.... 2 Weight Watchers points!

So... have 2 mini cupcakes... I won't tell! It totally satisfies your sweet tooth and you won't be too bummed out after all!

Next time, I'm gonna swap out some of the ingredients and see if I can come up with a yummy cupcake with even less calories. I don't drink diet sodas, so the typical 1 can soda, 1 box mix thing is no good... but we'll figure out something! :o)

I totally forgot about the diet soda/cake mix trick. I have done it before and it's actually really good. Having Josh home is making my diet suck. He hasn't eaten out in 9 months so that's all he wants to do :(
