A Bird in the Hand

Good morning... it's time to jump on in, because an empty tummy doesn't wait!

Ryan woke up and the first thing out of his mouth... "Mom... baba (food)?" So, it's time to start getting creative. Sure, I can start using things that are easy now, but then by the end of the month... I will be out of enough staples to even pretend to be creative. So instead of doing breakfast cereal and big ol' glasses of milk... we are going to do pancakes.

I stopped buying Bisquick a while back... not really sure why... just did. But I buy flour, sugar, and baking soda like there is no tomorrow... so today we whipped up pancakes old school. I pulled out my mom's Pillsbury Kitchen's cookbook, circa 1979 for a good tried and true recipe. Here's what we went with.

Basic Pancakes
2 Eggs
2 Cups Buttermilk*
1/4 cup oil
1 3/4 cup Pillsbury's Best all purpose flour
2 tbls sugar
2 tsp baking powder*
1 tsp soda*
1 tsp salt

Heat griddle to medium-high heat. IOn large bowl, beat eggs; stir in buttermilk and oil. Add remaining ingredients; beat just until large lumps dissapear. For thicker pancakes, thicken with additional flour; for thinner pancakes , add more milk. Lightly grease heated griddle. Pour batter, about 1/4 cup at a time, onto hot griddle. Bake until bubbles form and edges start to dry; turn and bake other side. Yields sixteen 4-inch pancakes.

*I swapped my regular milk since we didn't have buttermilk (and I was too lazy to make my own) and reduced it to 1 3/4 cups milk, increased the baking powder to 4 tsp and omited the baking soda, per the recipe suggestions.

Topped them with syrup I had stocked up on. Coffee for the hubs (made at home, Bucks in his stocking), and water for me. The kiddo had chocolate milk. :o)

Verdict? Just as good as old aunt Betty. :o) I was able to freeze a batch as well for Ryan's breakfast during the week!

We are headed to my parents house to watch the game (and eat lunch) and we'll figure out dinner later. But so far, we are doing good... and I know that this is only a season in our lives. We aren't here forever... just passing through.

Such a great idea! I just bought some Bisquick at Costco today and pancakes sound so good. I've never frozen them before but I just might try it! Instead of syrup I put strawberry jelly on the pancakes for the kids- less messy and it saves $$$! Syrup can be so pricey!
